Kung Pao Chicken

Ingredients (2 Persons)
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 teaspoon red pepper flakes
- 3 tablespoons cornstarch
- 1/2 cup roasted peanuts
Directions

Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken cubes and cook until they are golden brown on all sides, about 4-5 minutes.

Add the garlic, ginger, soy sauce, rice vinegar, honey, sesame oil, and red pepper flakes to the skillet and stir to combine. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.

In a small bowl, whisk together the cornstarch and 1/4 cup of water. Add the cornstarch mixture to the skillet and stir to combine. Cook for an additional 3-4 minutes, until the sauce has thickened.

Stir in the peanuts and cook for 1 minute. Serve the kung pao chicken over cooked rice or noodles.
