Mango Curry

Mango Curry is a flavorful and fragrant dish made with ripe mangoes, spices, and coconut milk. Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper
  • 1/2 cup coconut milk
  • 2 cups diced mango
  • 2 tablespoons chopped fresh cilantro

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic and ginger and cook until fragrant, about 1 minute.
  • Step 3
    Stir in the curry powder, cumin, coriander, turmeric, cardamom, cinnamon, and cayenne pepper and cook for 1 minute.
  • Step 4
    Stir in the coconut milk and mango and bring to a simmer. Cook for 5 minutes, stirring occasionally.
  • Step 5
    Stir in the cilantro and remove from the heat. Serve warm with rice or naan bread.
