Korean Kimchi Fried Rice
Korean Kimchi Fried Rice is a popular dish in Korea. Ingredients (2 Persons)
- 3 cups cooked white rice
- 1/2 cup kimchi, diced
- 1/4 cup kimchi brine
- 1 tablespoon sesame oil
- 1/2 onion, chopped
- 1/2 cup cooked bacon, crumbled
- 2 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 1/2 teaspoon red pepper flakes
- 2 tablespoons soy sauce
- 2 eggs, beaten
- 2 green onions, sliced
Directions

Step 1
Heat the sesame oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.

Add the garlic, ginger, and red pepper flakes. Cook for 1 minute, stirring constantly.

Add the kimchi and kimchi brine to the skillet and cook for 2 minutes.

Add the cooked bacon, cooked rice, and soy sauce to the skillet. Cook for 5 minutes, stirring occasionally.

Push the rice to one side of the skillet and add the beaten eggs to the other side. Cook the eggs until they are scrambled, stirring occasionally.

Stir the eggs into the rice and cook for 2 minutes, until everything is heated through.

Garnish with green onions and serve.
