Coconut Curry Lentil Soup

Ingredients (2 Persons)
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1/2 teaspoon cayenne pepper (optional)
- 4 cups vegetable broth
- 2 cups coconut milk
- 1 cup dry lentils, rinsed and drained
- 1 large sweet potato, peeled and diced
- 1 red bell pepper, diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro (optional)
Directions

Step 1
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

Stir in the curry powder, cumin, turmeric, coriander, ginger, and cayenne pepper (if using). Cook for 1 minute, until fragrant.

Pour in the vegetable broth, coconut milk, lentils, sweet potato, bell pepper, salt, and black pepper. Bring the mixture to a boil.

Reduce the heat to low and simmer, covered, until the lentils and sweet potato are tender, about 25-30 minutes.

Add the cilantro, if using, and season with additional salt and pepper, to taste. Serve warm.
