Vegan Sushi Bowl with Tofu and Mango

Ingredients (2 Persons)

  • 1 package extra-firm tofu, pressed and cubed
  • 2 tablespoons sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup tamari
  • 2 cups cooked sushi rice
  • 1 large mango, diced
  • 1 large avocado, diced
  • 1/4 cup chopped scallions
  • 1/4 cup sesame seeds
  • 1/4 cup pickled ginger, chopped

Directions

  • Step 1
    Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • Step 2
    In a bowl, combine the cubed tofu, sesame oil, garlic powder, ginger, cumin, black pepper, and salt. Toss until the tofu is coated in the seasoning.
  • Step 3
    Spread the tofu onto the prepared baking sheet and bake in the preheated oven for 30 minutes, flipping once halfway through.
  • Step 4
    In a small bowl, whisk together the tamari and 1 tablespoon of water. Set aside.
  • Step 5
    Divide the cooked sushi rice into 4 bowls. Top with the cooked tofu, mango, avocado, scallions, sesame seeds, and pickled ginger.
  • Step 6
    Drizzle with the tamari sauce and serve.
