Vegan Sushi Stuffed Squash

Ingredients (2 Persons)

  • 4 small acorn squashes
  • 2 cups cooked sushi rice
  • 1/4 cup vegan mayonnaise
  • 2 tablespoons sriracha
  • 1/2 cup sliced cucumber
  • 1/2 cup sliced avocado
  • 1/4 cup sliced nori
  • 1/4 cup toasted sesame seeds

Directions

  • Step 1
    Preheat the oven to 375 degrees F (190 degrees C). Cut the squash in half and scoop out the seeds.
  • Step 2
    Place the squash halves cut-side down on a baking sheet. Bake for 25 minutes, until the squash is tender.
  • Step 3
    In a medium bowl, mix together the sushi rice, vegan mayonnaise, and sriracha until fully combined.
  • Step 4
    Remove the squash from the oven and fill each half with the sushi rice mixture. Top with cucumber, avocado, and nori.
  • Step 5
    Sprinkle with toasted sesame seeds and serve.
