Chickpea Curry

Chickpea Curry is a popular vegetarian dish from India. It is made from cooked chickpeas, spices and herbs, and usually served with rice or naan. Ingredients (2 Persons)

  • 1 teaspoon vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground cardamom
  • 4 cups vegetable broth
  • 3 cups cooked chickpeas
  • 1 cup diced tomatoes
  • 1/2 cup frozen green peas
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the oil in a large pot over medium heat. Add the garlic and onion and cook, stirring occasionally, until the onion is softened, about 5 minutes.
  • Step 2
    Stir in the cumin, coriander, turmeric, cinnamon, cayenne pepper, and cardamom. Cook for 1 minute, stirring constantly, until the spices are fragrant.
  • Step 3
    Add the vegetable broth and chickpeas and bring the mixture to a boil. Reduce the heat to low and simmer for 10 minutes.
  • Step 4
    Stir in the diced tomatoes, frozen green peas, and cilantro. Simmer for an additional 5 minutes, until the vegetables are tender.
