Vegetarian Chickpea Curry

- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 tablespoons freshly grated ginger
- 2 teaspoons curry powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (optional)
- 1 (14-ounce) can diced tomatoes
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1/2 cup vegetable broth
- 1 tablespoon freshly squeezed lemon juice
- 1/4 cup chopped fresh cilantro leaves
- Salt and freshly ground black pepper, to taste
Directions

Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.

Stir in garlic, ginger, curry powder, cumin, cinnamon, and cayenne pepper, if using, and cook for 1 minute.

Stir in diced tomatoes, chickpeas, and vegetable broth. Bring to a simmer, then reduce heat and let simmer for 10 minutes.
