Vegan Red Lentil Curry

Ingredients (2 Persons)

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 (14-ounce) can diced tomatoes
  • 2 cups vegetable broth
  • 1 cup red lentils, rinsed and drained
  • 1 (14-ounce) can coconut milk
  • 1/4 cup chopped fresh cilantro
  • Salt and freshly ground black pepper, to taste

Directions

  • Step 1
    Heat olive oil in a large pot over medium heat. Add onion and garlic and cook, stirring occasionally, until onion is translucent, about 3-4 minutes.
  • Step 2
    Stir in ginger, curry powder, cumin, coriander, turmeric and cayenne pepper until fragrant, about 1 minute.
  • Step 3
    Stir in tomatoes, vegetable broth and lentils. Bring to a boil; reduce heat and simmer, stirring occasionally, until lentils are tender, about 20 minutes.
  • Step 4
    Stir in coconut milk and cilantro; season with salt and pepper, to taste. Simmer until heated through, about 5 minutes.
  • Step 5
    Serve warm.
