Kappa Maki Roll Sushi

Kappa maki roll sushi is a type of Japanese sushi roll made with cucumber (kappa in Japanese). It is usually filled with other ingredients such as cooked rice, tuna, salmon, or avocado, and wrapped with seaweed (nori). The filling ingredients can vary widely, and other ingredients such as egg, pickles, and sesame seeds may be added. Kappa maki rolls are a popular option for sushi lovers, as they are light, refreshing, and relatively healthy.

Ingredients (2 Persons)

  • 4 cups cooked Japanese white rice
  • 4 sheets nori seaweed
  • 2 cups grated kappa (Japanese cucumber)
  • 1/4 cup sushi vinegar

Directions

  • Step 1
    Place the cooked Japanese white rice in a large bowl. Pour the sushi vinegar over the rice and mix it in with a wooden spoon until it is evenly distributed.
  • Step 2
    Place a sheet of nori seaweed on a sushi mat with the shiny side facing down.
  • Step 3
    Spread 1 cup of the cooked rice onto the nori seaweed in an even layer. Leave a 1-inch border at the top of the seaweed uncovered.
  • Step 4
    Sprinkle 1/2 cup of the grated kappa over the top of the rice.
  • Step 5
    Starting at the bottom of the seaweed and sushi mat, roll the sushi roll up tightly. Use the sushi mat to help shape the roll while you roll it.
  • Step 6
    Repeat this process with the remaining ingredients to make 4 Kappa Maki Rolls.
