Spicy Chickpea Curry

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon cayenne pepper (or more to taste)
  • 1 teaspoon salt
  • 4 cups cooked chickpeas
  • 1 (14 ounce) can diced tomatoes
  • 1 cup coconut milk
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat oil in a large pot over medium heat. Add onion, garlic, and ginger and cook, stirring occasionally, until onion is softened, about 5 minutes.
  • Step 2
    Stir in cumin, coriander, turmeric, cayenne, and salt. Cook, stirring, for 2 minutes.
  • Step 3
    Add chickpeas, tomatoes, and coconut milk. Bring to a simmer and cook, stirring occasionally, until sauce thickens, about 10 minutes.
  • Step 4
    Stir in cilantro and serve. Enjoy!
