Vegetable Jalfrezi Curry

Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (1-inch) piece ginger, grated
  • 2 teaspoons ground cumin
  • 2 teaspoons garam masala
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cinnamon
  • 1 (14-ounce) can diced tomatoes
  • 2 cups diced fresh or frozen vegetables (such as potatoes, carrots, bell peppers, cauliflower, or green beans)
  • 1 cup cooked chickpeas
  • 1/4 cup chopped fresh cilantro
  • Salt, to taste

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, cumin, garam masala, coriander, turmeric, chili powder, cardamom, cloves, and cinnamon. Cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Stir in the tomatoes, vegetables, chickpeas, and cilantro. Bring the mixture to a simmer and cook until the vegetables are tender, about 10 minutes.
  • Step 4
    Season with salt, to taste. Serve warm with cooked rice or naan bread.
