Vietnamese-Style Chicken and Rice

Ingredients (2 Persons)

  • 3 tablespoons vegetable oil
  • 1½ pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 3 tablespoons fish sauce
  • 3 tablespoons soy sauce
  • 1 teaspoon sugar
  • 4 cups cooked white rice
  • 2 cups snow peas, trimmed and halved
  • 1 bunch scallions, thinly sliced
  • 1 cup fresh cilantro leaves, chopped

Directions

  • Step 1
    Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and season with the pepper and garlic powder. Cook, stirring often, until the chicken is cooked through, 8 to 10 minutes.
  • Step 2
    Stir in the fish sauce, soy sauce and sugar. Reduce the heat to low and simmer until the sauce thickens, about 5 minutes.
  • Step 3
    Add the cooked rice and snow peas to the skillet and cook, stirring often, until the snow peas are tender, about 5 minutes.
  • Step 4
    Stir in the scallions and cilantro and cook for 1 minute more. Serve hot.
