Korean Bibimbap

Korean Bibimbap is a traditional Korean dish made up of steamed white rice and various vegetables, such as spinach, mushrooms, carrots, and bean sprouts, topped with a spicy chili sauce and a fried egg. Ingredients (2 Persons)

  • 1 cup short-grain white rice
  • 2 tablespoons sesame oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup shiitake mushrooms, sliced
  • 1/2 cup carrots, julienned
  • 1/2 cup bean sprouts
  • 1/2 cup zucchini, julienned
  • 1/2 cup spinach
  • 2 eggs
  • 1/4 cup gochujang (Korean red chili paste)
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon sugar
  • 2 tablespoons toasted sesame seeds

Directions

  • Step 1
    Cook the rice according to the instructions on the package.
  • Step 2
    Heat the sesame oil in a large skillet over medium-high heat. Add the onion and garlic and cook for 2-3 minutes, until softened.
  • Step 3
    Add the mushrooms, carrots, bean sprouts, and zucchini and cook for an additional 3-4 minutes, until the vegetables are tender.
  • Step 4
    Add the spinach and cook for 1-2 minutes, until wilted.
  • Step 5
    Push the vegetables to one side of the skillet and crack the eggs into the other side. Cook until the whites are set and the yolks are still runny.
  • Step 6
    In a small bowl, whisk together the gochujang, soy sauce, rice vinegar, and sugar.
  • Step 7
    Add the sauce to the skillet and stir to combine. Cook for 1-2 minutes, until heated through.
  • Step 8
    Serve the bibimbap with the cooked rice and top with toasted sesame seeds.
