Coconut Lentil Curry

Coconut Lentil Curry is a hearty and flavorful vegan dish that is perfect for any occasion. This curry is made with a combination of red lentils, coconut milk, garlic, ginger, and a variety of spices. It is easy to make and can be served over rice, quinoa, or even on its own as a soup! Ingredients (2 Persons)

  • 2 tablespoons coconut oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup dried red lentils
  • 2 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (14 ounces) coconut milk

Directions

  • Step 1
    Heat the coconut oil in a large pot over medium heat. Add the cumin seeds and cook for 1 minute, stirring constantly.
  • Step 2
    Add the onion and garlic and cook for 3-4 minutes, stirring occasionally, until the onion is softened and lightly browned.
  • Step 3
    Stir in the ginger, curry powder, turmeric, garam masala, salt, and pepper. Cook for 1 minute, until the spices are fragrant.
  • Step 4
    Add the lentils, vegetable broth, and diced tomatoes to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for 25-30 minutes, until the lentils are tender.
  • Step 5
    Stir in the coconut milk and simmer for 5-10 minutes. Serve the curry hot with cooked rice or naan bread.
