Coconut Lentil Curry

- 2 tablespoons coconut oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 teaspoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup dried red lentils
- 2 cups vegetable broth
- 1 can (14.5 ounces) diced tomatoes
- 1 can (14 ounces) coconut milk

Heat the coconut oil in a large pot over medium heat. Add the cumin seeds and cook for 1 minute, stirring constantly.
