Carrot & Coriander Curry

Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 2 onions, diced
  • 4 cloves garlic, minced
  • 2 tablespoons ginger, grated
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 2 large carrots, diced
  • 1/2 cup vegetable stock
  • 1/4 cup fresh coriander, chopped
  • 1 can (14 oz) coconut milk

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the onions and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic and ginger and cook for 1 minute, until fragrant.
  • Step 3
    Stir in the garam masala, cumin, coriander, and turmeric, and cook for 1 minute.
  • Step 4
    Add the carrots, vegetable stock, and coriander, and bring to a simmer. Simmer for 10 minutes, until the carrots are tender.
  • Step 5
    Stir in the coconut milk and simmer for an additional 5 minutes, until the sauce has thickened.
