Vietnamese Spring Rolls

Ingredients (2 Persons)
- 1/2 pound cooked shrimp, chopped
- 1/2 pound cooked pork, chopped
- 1/2 head of cabbage, shredded
- 1/2 cup carrots, shredded
- 1/2 cup bean sprouts
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 teaspoon fish sauce
- 2 teaspoons sugar
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1/4 teaspoon red pepper flakes
- 1 package rice paper wrappers
Directions

Step 1
In a large bowl, combine the shrimp, pork, cabbage, carrots, bean sprouts, mint, cilantro, fish sauce, sugar, garlic, vegetable oil, and red pepper flakes.

Soak a rice paper wrapper in warm water until softened, about 30 seconds. Lay it flat on a work surface.

Fill the wrapper with the filling, packing it lightly and leaving a 1-inch border on all sides.

Fold the sides of the wrapper over the filling, then roll it up tightly, tucking the sides in as you go.

Repeat this process with the remaining wrappers and filling.
