Cucumber Maki Sushi

Ingredients (2 Persons)

  • 4 sheets of nori
  • 2 cups of cooked sushi rice
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of sugar
  • 2 teaspoons of salt
  • 1 large cucumber, cut into thin strips

Directions

  • Step 1
    Place a sheet of nori on a sushi rolling mat, shiny side down.
  • Step 2
    Spread 1/2 cup of sushi rice evenly over the nori, leaving a 1/2 inch border around the edge.
  • Step 3
    Place cucumber strips in a single layer across the center of the nori.
  • Step 4
    Carefully roll the sushi mat up, pressing firmly as you go.
  • Step 5
    Using a sharp knife, cut the sushi roll into 8 equal pieces.
