Curry Vegetable Soup

Ingredients (2 Persons)

  • 3 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and ginger and cook until softened, about 5 minutes.

    Stir in the curry powder, cumin, turmeric, and cinnamon and cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Add the diced potatoes, carrots, and celery to the pot and stir to combine. Pour in the vegetable broth and bring the mixture to a simmer. Cook for 10-15 minutes, until the vegetables are tender.
  • Step 4
    Stir in the coconut milk and season with salt and pepper to taste. Simmer for an additional 5 minutes, until the soup is heated through.
