Miso Soup with Tofu

  • 4 cups vegetable broth
  • 2 tablespoons white miso paste

  • 1/2 cup diced onion
  • 1/2 cup diced carrot
  • 1/2 cup diced celery
  • 1/2 cup diced mushrooms
  • 1/2 cup diced firm tofu
  • 1/4 cup baby spinach

Directions

  • Step 1
    In a large pot, bring the vegetable broth to a boil over medium-high heat.
  • Step 2
    Add the miso paste, garlic, ginger, and red pepper flakes and stir to combine.
  • Step 3
    Add the onion, carrot, celery, mushrooms, and tofu and cook for 3-5 minutes, until the vegetables are tender.
  • Step 4
    Add the baby spinach and cook for 1 minute, until the spinach is wilted.
  • Step 5
    Serve the miso soup warm.
