Vegan Sweet Potato Curry

Ingredients (2 Persons)

  • 4 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 2 onions, diced
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14-ounce) can coconut milk
  • 1 cup vegetable broth
  • 1 (14-ounce) can diced tomatoes
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/2 cup frozen peas

Directions

  • Step 1
    Heat the oil in a large pot over medium-high heat. Add the onions and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic and ginger and cook for 1 minute.
  • Step 3
    Stir in the curry powder, cumin, coriander, turmeric, cinnamon, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
  • Step 4
    Add the sweet potatoes and stir to coat with the spices. Cook for 2 minutes.
  • Step 5
    Pour in the coconut milk, vegetable broth, and diced tomatoes. Bring the mixture to a boil, then reduce the heat to low and simmer for 10-15 minutes, until the sweet potatoes are tender.
  • Step 6
    Stir in the chickpeas and frozen peas. Simmer for 5-10 minutes, until the peas are heated through.
