Ingredients (2 Persons)

  • 1 package of sushi rice
  • 1/2 cup of rice vinegar
  • 2 tablespoons of sugar
  • 1 teaspoon of salt
  • 1 package of nori sheets
  • 1/2 cup of cream cheese, softened
  • 1/2 cup of smoked salmon, chopped
  • 1 cucumber, julienned

Directions

  • Step 1
Rinse the sushi rice in a bowl of cold water until the water runs clear. Place the rice in a medium-sized pot with 2 cups of water. Bring to a boil, reduce the heat to low, and simmer for 15 minutes, or until the water is absorbed.
  • Step 2
In a small bowl, combine the vinegar, sugar, and salt and stir until the sugar is dissolved. Place the cooked sushi rice in a large bowl and pour the vinegar mixture over it. Using a wooden spoon or spatula, gently fold the vinegar mixture into the rice until it is evenly distributed.
  • Step 3
Lay a nori sheet on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving 1/2 inch of the nori exposed at the top. Place the cream cheese, smoked salmon, and cucumber in a line across the middle of the sushi rice.
  • Step 4
Roll the sushi by lifting up the bottom of the bamboo mat and rolling it over the fillings. Squeeze the mat gently to form a tight roll. Slice the sushi roll into 8 pieces and serve with soy sauce and wasabi.
