Japanese-Style Ramen Noodles

Ingredients (2 Persons)
- 4 cups chicken broth
- 2 tablespoons soy sauce
- 2 tablespoons mirin (or substitute 1 teaspoon sugar and 1 tablespoon white wine vinegar)
- 1 teaspoon grated fresh ginger
- 1/2 cup sliced mushrooms
- 1/2 cup diced carrots
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 4 ounces ramen noodles
- 2 eggs, lightly beaten
- 2 green onions, thinly sliced
Directions

Step 1
In a large pot, bring the chicken broth, soy sauce, mirin, ginger, mushrooms, carrots, onions, and garlic to a boil over medium-high heat.

Add the ramen noodles and cook for 3-4 minutes, or until the noodles are tender.

Stir in the eggs and cook for 1 minute, or until the eggs are cooked through.

Stir in the green onions and serve hot.
