Thai Fried Rice with Basil and Chili

Ingredients (2 Persons)
- 3 tablespoons vegetable oil
- 2 cloves garlic, minced
- 2 tablespoons Thai red curry paste
- 1/2 teaspoon dried red chili flakes
- 2 cups cooked jasmine rice
- 1/2 cup frozen peas and carrots, thawed
- 1/2 cup chopped onion
- 2 tablespoons fish sauce
- 2 tablespoons soy sauce
- 1/4 cup chopped fresh basil
- 2 eggs, lightly beaten
Directions

Heat the oil in a wok or large skillet over medium-high heat. Add the garlic, curry paste, and chili flakes and cook for 1 minute.

Add the cooked rice, peas and carrots, and onion to the skillet and cook, stirring frequently, for 3-4 minutes.

Add the fish sauce, soy sauce, and basil to the skillet and cook for another minute.

Push the rice to one side of the skillet and pour the eggs into the empty side. Cook the eggs, stirring occasionally, until they are scrambled and cooked through.

Stir the eggs into the rice and cook for another minute or two, until everything is heated through and the flavors have melded together.
