Ingredients (2 Persons)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1/2 teaspoon cayenne pepper (optional)
- 4 cups vegetable broth
- 2 potatoes, diced
- 1 large carrot, diced
- 1 red bell pepper, diced
- 1 can (14 ounces) diced tomatoes
- 1 can (14 ounces) coconut milk
- 1 cup green peas, thawed if frozen

Heat a large saucepan over medium heat. Add the onion and garlic and cook for 5 minutes, stirring occasionally, until the onion is translucent.

Stir in the curry powder, turmeric, cumin, coriander, ginger, and cayenne pepper (if using). Cook for 1-2 minutes, until the spices are fragrant.

Add the vegetable broth, potatoes, carrot, and bell pepper to the saucepan. Bring the mixture to a simmer and cook for 10 minutes, until the vegetables are tender.

Stir in the diced tomatoes, coconut milk, and green peas. Simmer for 5-10 minutes, until the curry is heated through.
