Vegan Tomato and Lentil Curry

  • 1 onion, finely diced
  • 2 garlic cloves, minced

  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 (14-ounce) can diced tomatoes
  • 1 (14-ounce) can coconut milk
  • 1 cup dried green lentils
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, cumin, coriander, turmeric, cinnamon, and cayenne pepper and cook for 1-2 minutes, until fragrant.
  • Step 3
    Add the tomatoes, coconut milk, lentils, and 1 cup of water. Bring the mixture to a simmer and cook for 20-25 minutes, until the lentils are tender and the sauce has thickened.
  • Step 4
    Stir in the cilantro and serve with cooked rice or naan.
