Vegan Sushi Stuffed Avocado

Ingredients (2 Persons)

  • 2 large avocados
  • 2 cups cooked sushi rice, cooled
  • 1/4 cup vegan mayonnaise
  • 1 teaspoon sriracha sauce
  • 1/4 cup diced cucumber
  • 1/4 cup diced carrot
  • 1/4 cup diced bell pepper
  • 1/4 cup diced mango
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped toasted sesame seeds
  • 1/4 cup cooked edamame
  • 2 tablespoons toasted sesame oil

Directions

  • Step 1
    Cut each avocado in half lengthwise and remove the pit. Carefully scoop out about two tablespoons of the avocado flesh from each half, creating a larger cavity for the sushi filling.
  • Step 2
    In a medium bowl, mix together the cooked sushi rice, vegan mayonnaise, and sriracha sauce. Gently fold in the cucumber, carrot, bell pepper, mango, cilantro, sesame seeds, edamame, and sesame oil.
  • Step 3
    Spoon the sushi filling into each avocado half, gently pressing it down so it is packed in.
  • Step 4
    Garnish the stuffed avocados with extra sesame seeds and cilantro, if desired.
