Tomato Curry

Tomato Curry is a spicy, tangy and flavorful Indian dish. It is made with a base of tomatoes and other spices such as cumin, coriander, turmeric, ginger, garlic, and chilli powder. Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is softened and translucent, about 5 minutes.
  • Step 2
    Add the ginger, cumin, coriander, turmeric, paprika, and cinnamon to the skillet and cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Add the diced tomatoes and their juices to the skillet and stir to combine. Bring the mixture to a simmer and cook for 10-15 minutes, until the tomatoes are softened and the sauce has thickened.
  • Step 4
    Stir in the coconut milk and season with salt and pepper to taste. Simmer for an additional 5 minutes before serving.
