Vegan Sweet Potato and Kale Curry

Ingredients (2 Persons)

  • 2 tablespoons coconut oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (14 ounces) coconut milk
  • 1 cup vegetable broth
  • 2 sweet potatoes, peeled and diced
  • 1 bunch kale, stems removed and leaves chopped
  • 1/4 cup chopped fresh cilantro, for garnish

Directions

  • Step 1
    Heat the coconut oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for 1 minute, stirring constantly.
  • Step 2
    Add the curry powder, cumin, coriander, turmeric, cayenne pepper (if using), salt, and black pepper. Cook for 1 minute until fragrant.
  • Step 3
    Add the coconut milk, broth, sweet potatoes, and kale. Increase the heat to high and bring the mixture to a boil. Reduce the heat to low and simmer for 15-20 minutes, or until the sweet potatoes are tender.
  • Step 4
    Garnish with cilantro, if desired, and serve hot.
