Vegan Thai Curry

Ingredients (2 Persons)

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 3 tablespoons red curry paste
  • 1 teaspoon ground turmeric
  • 1 (14.5 ounce) can coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons brown sugar
  • 1 red bell pepper, seeded and diced
  • 1 green bell pepper, seeded and diced
  • 2 carrots, peeled and sliced
  • 1 zucchini, diced
  • 1 (8 ounce) package extra-firm tofu, drained and cubed

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, curry paste, and turmeric and cook for 1 minute.
  • Step 3
    Pour in the coconut milk and stir to combine. Add the soy sauce, lime juice, and brown sugar and stir until combined.
  • Step 4
    Add the bell peppers, carrots, zucchini, and tofu to the skillet. Cover and simmer until the vegetables are tender, about 10 minutes.
  • Step 5
    Serve the curry with cooked rice or noodles. Enjoy!
