Cauliflower and Potato Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 2 potatoes, peeled and cubed
  • 1 head cauliflower, cut into florets
  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) coconut milk

Directions

  • Step 1
    Heat the oil in a large pot over medium heat. Add the onion and cook for 5 minutes, until softened.
  • Step 2
    Add the garlic, ginger, cumin, coriander, turmeric, paprika, cinnamon, cardamom, cayenne pepper (if using), and salt. Cook for 1 minute, stirring frequently.
  • Step 3
    Add the potatoes and cauliflower, and stir to combine. Add the tomatoes and coconut milk, and stir to combine.
  • Step 4
    Bring the mixture to a boil, reduce the heat, and simmer for 15-20 minutes, until the potatoes and cauliflower are tender.
  • Step 5
    Serve the curry warm, over basmati rice or with naan bread.
