Coconut Curry Noodles

Ingredients (2 Persons)
- 1 pound dried noodles
- 2 tablespoons olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 2 tablespoons freshly grated ginger
- 2 tablespoons red curry paste
- 1 (14-ounce) can coconut milk
- 1/4 cup vegetable broth
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 cup diced bell pepper
- 1/2 cup diced carrots
- 1/2 cup sliced mushrooms
- 1/2 cup frozen peas
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped peanuts (optional)
Directions

Step 1
Cook the noodles according to package instructions. Drain and set aside.

Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic, and ginger and cook for 2 minutes.

Stir in the curry paste and cook for 1 minute.

Add the coconut milk, vegetable broth, soy sauce, brown sugar, salt, and pepper and bring to a simmer.

Stir in the bell pepper, carrots, mushrooms, and frozen peas and cook for 5 minutes.

Add the cooked noodles to the skillet and stir to combine. Cook for 2 minutes more.
