Singapore Laksa

Singapore Laksa is a popular dish in Singapore and Malaysia. It is a spicy noodle soup that is made with a mix of spices, herbs, and coconut milk. Ingredients (2 Persons)

  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 2 tablespoons red curry paste
  • 1 (14-ounce) can coconut milk
  • 3 cups chicken broth
  • 1 tablespoon brown sugar
  • 2 tablespoons fish sauce
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 8 ounces vermicelli noodles
  • 1 pound cooked shrimp, peeled and deveined
  • 1/2 cup bean sprouts
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fried shallots
  • 1 lime, cut into wedges

Directions

  • Step 1
    Heat the oil in a large pot over medium heat. Add the garlic and curry paste and cook, stirring, until fragrant, about 1 minute.
  • Step 2
    Stir in the coconut milk, chicken broth, brown sugar, fish sauce, turmeric, cinnamon, and nutmeg. Bring to a simmer and cook for 10 minutes.
  • Step 3
    Add the vermicelli noodles and cook for 5 minutes, stirring occasionally. Add the shrimp, bean sprouts, and cilantro and cook for an additional 5 minutes.
  • Step 4
    Serve the laksa in bowls topped with fried shallots and a lime wedge.
