Vegetable Lo Mein

Ingredients (2 Persons)
- 2 tablespoons vegetable oil
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 1 yellow onion, cut into strips
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/2 teaspoon crushed red pepper flakes (optional)
- 2 cups broccoli florets
- 8 ounces lo mein noodles
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons honey
- 1 tablespoon rice wine vinegar

Step 1
Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the bell peppers, onion, garlic, ginger and red pepper flakes (if using) and cook for 4-5 minutes, until the vegetables are tender and beginning to brown.

Add the broccoli and cook for an additional 2-3 minutes, until the broccoli is bright green and crisp-tender.

Add the noodles to the pan and stir to combine. Cook for 1-2 minutes, until the noodles have warmed through.

Stir in the soy sauce, sesame oil, honey, and rice wine vinegar. Cook for 1-2 minutes, stirring constantly, until the sauce has thickened and the noodles are evenly coated.
