Vietnamese-Style Summer Rolls

Ingredients (2 Persons)
- 8 ounces extra-firm tofu, drained, pressed, and diced small
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup shredded carrot
- 1/2 cup thinly sliced cucumber
- 1/2 cup thinly sliced red bell pepper
- 1/4 cup chopped fresh cilantro leaves
- 1/4 cup chopped fresh mint leaves
- 8 8-inch rice paper wrappers
Directions

Step 1
Preheat the oven to 400 degrees F and line a large baking sheet with parchment paper.

In a medium bowl, mix together the tofu, olive oil, garlic powder, ginger, salt, and pepper.

Spread the tofu mixture onto the prepared baking sheet and bake for 15 minutes, until the tofu is lightly golden and crispy.

Remove the baking sheet from the oven and set aside to cool.

In a large bowl, combine the carrot, cucumber, bell pepper, cilantro, and mint. Add the cooled tofu and mix until everything is evenly combined.

Fill a large bowl or plate with warm water.

Submerge one rice paper wrapper in the warm water for 30 seconds, or until it's soft and pliable.

Transfer the wrapper to a cutting board and fill with 1/8 of the tofu mixture. Fold the sides of the wrapper in over the filling, then roll it up tightly.

Repeat with the remaining wrappers and filling.
