Indian Lamb Curry

Ingredients (2 Persons)

  • 2 teaspoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger root
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 2 pounds lamb, cubed
  • 1 cup beef broth
  • 1 cup canned chopped tomatoes
  • 1/2 cup plain yogurt
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the garlic and ginger and cook, stirring, until fragrant, about 1 minute.
  • Step 2
    Add the cumin, coriander, turmeric, garam masala, cinnamon, and cardamom and cook, stirring, for 30 seconds.
  • Step 3
    Add the lamb and cook, stirring, for 3 minutes.
  • Step 4
    Stir in the beef broth and tomatoes and bring to a simmer. Reduce the heat to medium-low and simmer until the lamb is tender and the sauce is slightly thickened, about 30 minutes.
  • Step 5
    Stir in the yogurt and cilantro. Simmer for an additional 5 minutes and serve hot.
