Vegan Chickpea and Kale Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cans chickpeas, drained and rinsed
  • 1 can diced tomatoes, undrained
  • 1 can coconut milk
  • 1 large bunch kale, stemmed and chopped
  • Salt and pepper to taste

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, curry powder, cumin, coriander, turmeric, cinnamon, and red pepper flakes (if using). Cook for 1-2 minutes, until fragrant.
  • Step 3
    Stir in the chickpeas, tomatoes, coconut milk, and kale. Bring the mixture to a simmer and cook for 10 minutes, or until the kale is tender.
  • Step 4
    Season with salt and pepper to taste. Serve hot with cooked rice or naan bread.
