Singapore Chili Crab

Singapore Chili Crab is a popular local dish that has been around since the 1950s. It is made with mud crabs, tomato and chilli-based sauce, and other seasonings. The sauce is usually thick and savory and the crab is stir-fried in it. It is served with mantou, a type of Chinese steamed bun, which is often used to soak up the sauce. Singapore Chilli Crab is considered one of the best dishes in Singapore and is a must-try for any visitor.

Ingredients (2 Persons)

  • 4 Dungeness crabs, cleaned and cut into quarters
  • 1 teaspoon salt
  • 4 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 2 tablespoons chili sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons light soy sauce
  • 2 tablespoons rice vinegar
  • 1/4 cup water
  • 1/4 teaspoon sugar
  • 1/2 teaspoon sesame oil

Directions

  • Step 1
    Heat a large skillet over medium-high heat. Add the vegetable oil and heat until it is hot.
  • Step 2
    Add the garlic and ginger and cook for 1 minute, until fragrant.
  • Step 3
    Add the crabs to the skillet and season with salt. Cook for about 4 minutes, until the crabs are lightly browned.
  • Step 4
    In a small bowl, whisk together the chili sauce, tomato paste, soy sauce, rice vinegar, water, sugar, and sesame oil. Pour the mixture over the crabs and cook for an additional 4 minutes, until the sauce has thickened.
  • Step 5
    Serve the chili crab hot with steamed white rice.
