Kadai Curry

- 4 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 2 large onions, diced
- 2 tablespoons ginger-garlic paste
- 2 green chilies, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 cup diced tomatoes
- 1 cup diced bell peppers
- 1 cup diced potatoes
- 1 cup cooked chickpeas
- 2 tablespoons chopped cilantro
- Salt to taste
Directions

Step 1
Heat oil in a large skillet over medium heat. Add cumin and coriander seeds and cook for 1 minute.

Add onions and cook until they are golden brown, about 10 minutes.

Add ginger-garlic paste and green chilies and cook for 1 minute.

Add turmeric, red chili powder, garam masala, coriander powder, and cumin powder and cook for 1 minute.

Add tomatoes, bell peppers, potatoes, and chickpeas and stir to combine.

Cover and cook for 10-15 minutes, stirring occasionally, until the vegetables are tender.
