Ebi Sushi

Ingredients (2 Persons)

  • 2 cups sushi rice
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 8 pieces of cooked shrimp
  • 1/4 cup mayonnaise
  • 1 teaspoon Sriracha sauce
  • 4 sheets of nori seaweed

Directions

  • Step 1
    Cook the sushi rice according to package instructions and let cool to room temperature.
  • Step 2
    In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Pour the mixture over the cooled sushi rice and stir until evenly combined.
  • Step 3
    In a separate bowl, mix together the mayonnaise and Sriracha sauce. Set aside.
  • Step 4
    Lay out a sheet of nori on a flat work surface. Wet your hands to prevent the rice from sticking and spread about 1/4 cup of sushi rice onto the nori. Arrange two pieces of cooked shrimp in the center of the rice.
  • Step 5
    Spread about 1 teaspoon of the mayonnaise-Sriracha mixture over the shrimp. Using your hands, carefully roll the nori into a tight cylinder. Wet the edge of the nori slightly to help seal the roll.
  • Step 6
    Repeat with the remaining ingredients to make 4 rolls total.
