Coconut Green Curry

Ingredients (2 Persons)
- 2 tablespoons coconut oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated or minced
- 2 tablespoons green curry paste
- 1 can coconut milk
- 1/2 cup vegetable broth
- 1 red bell pepper, diced
- 1/2 cup frozen peas
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Directions

Step 1
Heat the coconut oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the garlic, ginger, and green curry paste and cook for 1 minute.

Stir in the coconut milk and vegetable broth and bring the mixture to a simmer. Simmer for 5 minutes, stirring occasionally.

Add the bell pepper, peas, salt, and pepper and simmer for an additional 5 minutes.
