Japanese Chicken Katsu Curry

Ingredients (2 Persons)

  • 4 boneless, skinless chicken breasts
  • 2 cups panko breadcrumbs
  • 2 eggs, beaten
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • oil, for frying
  • 2 cups cooked Japanese curry, store-bought or homemade

Directions

  • Step 1
    Place the chicken breasts between two pieces of plastic wrap and pound them to 1/2-inch thickness. Cut the chicken into strips.
  • Step 2
    In a shallow bowl, mix together the panko, garlic powder, salt, and black pepper. Dip the chicken strips in the beaten egg, then coat them with the panko mixture.
  • Step 3
    Heat the oil in a large skillet over medium-high heat. Fry the chicken strips in batches until golden brown, about 3 minutes per side.
  • Step 4
    Serve the chicken strips with the prepared curry and rice.
