Thai Coconut Curry Soup

Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons red curry paste
  • 1 teaspoon ground coriander
  • 4 cups vegetable broth
  • 2 cans coconut milk
  • 1 red bell pepper, diced
  • 1 cup mushrooms, sliced
  • 1 cup carrots, diced
  • 1 cup snow peas
  • 1 cup cooked rice

Directions

  • Step 1
    Heat the oil in a large pot over medium-high heat. Add the onion and sauté until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, curry paste, and coriander and cook for 1 minute, stirring constantly.
  • Step 3
    Add the vegetable broth, coconut milk, bell pepper, mushrooms, carrots, and snow peas to the pot and bring to a boil.
  • Step 4
    Reduce the heat to low and simmer for 15 minutes, until the vegetables are tender.
  • Step 5
    Stir in the cooked rice and simmer for an additional 10 minutes. Serve hot.
