Yellowtail Nigiri Sushi

Yellowtail Nigiri Sushi is a type of sushi made with a slice of raw yellowtail fish placed atop a ball of vinegared rice. It is a popular type of sushi because of its flavor and texture. The yellowtail, also known as hamachi, is considered a delicacy and has a mild flavor and a delicate, buttery texture. The rice used for Yellowtail Nigiri Sushi is seasoned with a mixture of vinegar and sugar, and it is formed into a small ball. The fish and rice are then bound together with a thin strip of seaweed. Yellowtail Nigiri Sushi is usually served with wasabi, soy sauce, and pickled ginger.

Ingredients (2 Persons)

  • 2/3 cup short grain sushi rice
  • 1/2 cup water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 ounces fresh yellowtail fillet
  • 4 teaspoons wasabi paste

Directions

  • Step 1
    Rinse the rice in a fine mesh strainer and place it in a saucepan with the 1/2 cup of water. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan. Simmer for 15 minutes, then remove the pan from the heat and let it sit, covered, for 10 minutes.
  • Step 2
    In a small bowl, stir together the rice vinegar, sugar, and salt until the sugar and salt dissolve. Pour the vinegar mixture over the cooked rice and stir until the rice is fully coated.
  • Step 3
    Set up an assembly line with the cooked rice, yellowtail fillet, and wasabi paste. Slice the yellowtail into 1/2-inch thick pieces.
  • Step 4
    To assemble the nigiri, place a small ball of rice in the palm of your hand and flatten it slightly. Place a slice of yellowtail on top of the rice, then spread a small amount of wasabi paste on top of the yellowtail. Gently press the fish and rice together to form a nigiri, then transfer it to a plate.
