Tofu Curry

Tofu Curry is a delicious and healthy vegan dish that combines the flavors of India with the heartiness of tofu. Ingredients (2 Persons)

  • 1 tablespoon vegetable oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons curry powder
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 (14 ounce) can coconut milk
  • 2 tablespoons tomato paste
  • 2 tablespoons freshly squeezed lemon juice
  • 1 (14 ounce) block extra-firm tofu, drained and diced
  • 1 large sweet potato, peeled and diced
  • 1 red bell pepper, diced
  • 1 cup frozen green peas
  • Salt and freshly ground black pepper, to taste
  • Fresh cilantro, for garnish

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic and ginger, and cook for another minute.
  • Step 3
    Stir in the curry powder, garam masala, cumin, coriander, turmeric, and cayenne pepper (if using). Cook for 1-2 minutes, until the spices are fragrant.
  • Step 4
    Pour in the coconut milk and tomato paste and stir to combine.
  • Step 5
    Add the lemon juice, tofu, sweet potato, bell pepper, and frozen peas. Stir to combine and season with salt and pepper.
  • Step 6
    Reduce the heat to low, cover the skillet, and simmer for 20-25 minutes, stirring occasionally, until the sweet potatoes are tender.
  • Step 7
    Garnish with fresh cilantro, if desired.
