Vegan Mushroom and Pea Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 2 cups vegetable broth
  • 1 large sweet potato, peeled and cut into cubes
  • 2 cups sliced mushrooms
  • 1 cup frozen green peas
  • 1 can coconut milk
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, garlic, curry powder, cumin, turmeric, red pepper flakes, and salt. Cook for 1 minute more, stirring constantly.
  • Step 3
    Pour in the vegetable broth and sweet potato cubes and bring the mixture to a simmer. Cook for 10 minutes, until the sweet potato is tender.
  • Step 4
    Stir in the mushrooms and frozen peas and bring the mixture back to a simmer. Cook for 5 minutes more, until the mushrooms are tender.
  • Step 5
    Pour in the coconut milk and simmer for 10 minutes more, until the sauce has thickened.
  • Step 6
    Stir in the chopped cilantro and serve.
