Indian Chickpea Curry

Ingredients (2 Persons)

  • 4 tablespoons vegetable oil
  • 2 medium onions, diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon cayenne pepper
  • 2 (14-ounce) cans chickpeas, drained and rinsed
  • 1 (14-ounce) can diced tomatoes
  • 1 (14-ounce) can tomato sauce
  • 1 cup vegetable broth
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper, to taste

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the onions and cook, stirring occasionally, until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, cumin, coriander, turmeric, and cayenne pepper, and cook until fragrant, about 30 seconds.
  • Step 3
    Stir in the chickpeas, diced tomatoes, tomato sauce, and vegetable broth. Bring the mixture to a boil, reduce the heat to low, and simmer for 20 minutes, stirring occasionally.
  • Step 4
    Stir in the cilantro and season with salt and pepper to taste. Serve hot with rice or naan bread.
