Vegan Chickpea and Kale Coconut Curry

  • 1 teaspoon oil
  • 1 small onion, diced

  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cayenne pepper (optional)
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cardamom
  • 1 (14-ounce) can full-fat coconut milk
  • 2 cups vegetable broth
  • 2 tablespoons tomato paste
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 3 cups chopped kale leaves
  • 1/4 cup chopped fresh cilantro
  • 2 teaspoons freshly squeezed lime juice

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion and cook until it begins to soften, about 5 minutes.
  • Step 2
    Add the garlic, ginger, turmeric, cumin, cayenne, coriander, and cardamom. Cook for one minute, stirring frequently.
  • Step 3
    Pour in the coconut milk and vegetable broth and bring to a simmer. Add the tomato paste, chickpeas, and kale and simmer for 10 minutes.
  • Step 4
    Stir in the cilantro and lime juice and season with salt and pepper to taste. Serve over cooked rice or quinoa.
