Vegetable and Lentil Curry

Ingredients (2 Persons)

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 (14-ounce) can diced tomatoes
  • 1 (14-ounce) can coconut milk
  • 1 cup cooked lentils
  • 2 cups vegetables of your choice (such as carrots, bell peppers, and/or broccoli)
  • Salt and pepper, to taste

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Stir in the garlic, ginger, curry powder, cumin, coriander, turmeric, and cayenne pepper. Cook for 1 minute, until fragrant.
  • Step 3
    Stir in the tomatoes, coconut milk, lentils, and vegetables. Bring to a simmer and cook for 10 minutes, until the vegetables are tender.
  • Step 4
    Taste and season with salt and pepper, if desired. Serve over cooked rice or quinoa.
