Eel and Cucumber Roll Sushi

Eel and cucumber roll sushi is a type of sushi roll featuring grilled eel and cucumber. The sushi roll is typically made with a thin sheet of nori seaweed, filled with cooked eel, cucumber, and sushi rice, then rolled up and cut into bite-sized pieces. Eel and cucumber roll sushi is a popular menu item in Japanese restaurants around the world. It is often served with a sweet, tangy sauce such as teriyaki or a unique blend of soy sauce and sweet mirin.

Ingredients (2 Persons)

  • 2 eel fillets (defrosted if frozen)
  • 1/2 cucumber, thinly sliced into strips
  • 2 cups cooked sushi rice
  • 2 tablespoons toasted sesame seeds
  • 1/4 cup sushi vinegar

Directions

  • Step 1
    Lay the eel fillets skin side down on a cutting board. Cut them into thin strips.
  • Step 2
    Lay the cucumber strips out on a plate. Sprinkle with salt and let sit for 10 minutes.
  • Step 3
    Rinse the cucumber strips and pat them dry with paper towels.
  • Step 4
    Lay a sheet of nori on a sushi mat. Spread a thin layer of sushi rice over the nori.
  • Step 5
    Lay the eel strips and cucumber strips in the center of the nori. Sprinkle with toasted sesame seeds.
  • Step 6
    Roll the sushi up tightly with the sushi mat. Slice into 8 pieces.
  • Step 7
    Serve with sushi vinegar for dipping.
